El Agar agar flakes It is not actually an algae, but a white substance, formed by a extract of algae of the genera gelidiumEucheuma y Gracilaria.

The word “agar” comes from Malay gelatin, meaning "jelly."

When dissolved in hot water and cooled it becomes gelatinous. Its main use is in food. as the  thickener for soups, vegetable gelatins, ice creams and some desserts. Also as a beer clarifying agent.

Due to its high purity, it is also used in research (microbiology).

A tablespoon of Agar Agar flakes is capable of thickening 1 litre of liquid, boiling for 8 minutes (50 g = Garnish for 20 servings)

How can we consume it?

  • As gelatin in desserts: cakes, compotes, jams, flans, custards, creams, sorbets, juices, milk, milkshakes, chopped fruit. Boil for 8 minutes.
  • To make hard gelatin: 1 tablespoon (about 3 grams) per 1/2 liter of liquid. Allow to cool.
  • For flan consistency: 1 tablespoon per litre. Allow to cool.
  • As a neutral-tasting thickenerIt is also ideal for savoury pies, stews, purees and sauces.
